You should use the calibration tool from the 'displays' pref pane. That will let you tune things more precisely, and save a custom profile for just that projector.

Actually this was my first approach. The projector screen was so dark that calibration images were not useful. Decreasing gamma as far as possible still did not produce an acceptable projector image. The change between the two VGA color profiles was dramatic. I, too, tried all the color profiles available in Snow Leopard. None gave anything close to the old VGA color profile.
