Why not just trim it in iTunes? I do it all the time. Select the song, type command-i, click the options tab, enter the time indexes for start and stop, then Go to the Advanced menu and select "Create MP3 Version". It will compress based on the settings for import you have in iTunes preferences. It's not as user-friendly as having a slider to adjust the start and stop like in quicktime, but you can be very precise with a little effort (which I'm not sure you can do in quicktime - anyone?).
