Mac OS X's System Preferences Internet Sharing GUI is lame. You're better off using from the command line daemon it uses anyways: natd, the NAT (Network Address Translation) Daemon. Basically, "Internet Sharing" is what Apple calls a NAT, port-forwarding router (read this: ).

I'm working on configuring it on my machine. I haven't found a perfect solution, but maybe those links will help.
