This is also something you can institute into your Apple menu with FruitMenu ... instant restarts and shutdowns.

I use Fruitmenu, but I usually press control-eject to bring up the dialog.

But if you don't want the dialog you can press control-cmd-eject to restart, this is like the old "three finger salute" except on OS X it does a regular reboot, and not a forced one.

You can also press control-option-cmd-power to shut down. I haven't used these last two in Jaguar, but they should still work.

No Instant logout!

FruitMenu is great but in this case it disables the Instant Logout! Holding down option has no effect on the menu item elipsis and apple-option-shift-Q does nothing. I'll keep FruitMenu for the rest of the benefits but too bad this shortcut isn't available.
