Actually, you can add pages to an existing document, too (instead of just adding the document to the sidebar separately). To add pages to an already open PDF, you have to select the pages you want and drag them up near the pages of the other document; a bounding box will appear when your mouse pointer rolls over its area. A solid line will appear to show where the pages you are dragging will be dropped if you move the pointer up near the bottom of the last page of (or between two pages in) the other opened PDF.

It is interesting to note, too, that Apple did a nice job changing the single-page delete function to just the delete key... This is true unless you're deleting the last remaining page of a second document opened in the sidebar. You still have to CMD+delete to remove that (I'm guessing this is because it's not deleting the page, as far as Preview is concerned, it's deleting the document/book as a whole).
