You can also hold donw the mouse button on an Icon for a few seconds and the Menu will pop up - most of this was basic OS X.

But what SajjadK is saying looks like a SL specific thing. As Rob noted as well - The Option key controlling the option to Forcde Quit has also been around for a long while.

Moreover, it's not necessary to hold Option before showing a Dock menu. Once the menu is visible, you can press and release Option and Quit will dynamically change between Quit and Force Quit.
