I've run up against this incredibly annoying problem on multiple machines, all set to backup to a volume being shared over a LAN. I found that simply mounting the volume - on any machine - and then mounting the sparsebundle (by double-clicking, or Cmd-O) will, after a bit of a wait, open the contents, allowing you to drill down to the offending .inprogress file and delete it.
