Instead of pinging yourself you can use 'sleep' to introduce a delay:
$ sleep 1800; osascript -e "tell application "iTunes" to quit"

Even better:
sleep 1800 && osascript -e 'tell application "iTunes" to quit'
Using && rather than ; prevents osascript from running if you Ctrl-C during sleep.
