Set Excel to print one page wide by unlimited tall

In combination with this you can select the content area and choose
File> Print Area> Set Print Area.

This will push the content right out to the edges of the page.

These 2 features are the most useful things for making a document look decent on paper.

Window> Freeze Panes is also great for making long data sheets more manageable and still being able to see the Column Names. To use this, click in the last x,y cell you want to stay on screen and select 'Freeze Panes'. These cells will always stay on screen when you scroll horizontally or vertically.
