Two points:
- if one of your mail servers sits behind a firewall you might be able to access mail (via POP or IMAP) from outside the firewall but the smtp part might only be accessible from inside the firewall. And if you cannot (or don't want to) create a VPN to the inside of the firewall, you will then not be able to send mail from your iPhone with this account. With no copy and paste, replying to a message received in such an account could be cumbersome. However, selecting a different From address solves this problem. This is the equivalent of sending the reply via the selected alternative account, this is not sending it using only a different reply-to address.
