You can also do this:

In the Mail settings for the account where you define the from address for the account, list all the email addresses you would like to be able to appear to be sending from separating each by a comma.

Then when you are sending the email, you can tap on the from field and you will get presented with all the addresses you defined to choose from.

This also works in Mail.app on OS X.

Can you be more explicit about the location of "where you define the from address for the account" on the iPhone? The only possible field I see that you could be referring to is called "Address", and the keyboard for editing this field does not contain a comma character.

You do it on the computer, and sync the account to your phone. When you add the email addresses on the computer (whatever@domain.com, whatever2@domain.com, etc) then they'll sync that way to the phone, and you can select which address to use by clicking on the From field when sending an email. Pretty straightforward.
