This is a GREAT hint! thanks!

I removed the "Spam" and "Starred" subfolders; now I just have "All Mail" (inside "[Gmail]") but I'm hesitating whether I should remove it or not, because moving an email to the All Mail folder seems to be the only way to achieve the 'Archive' feature of Gmail (essential for the "Inbox zero" approach)

...do you guys know any alternative to achieve the Gmail's 'Archive' feature within Mail.app?

If you delete the message from your INBOX, then it remains in the [All Mail] folder.

...not true with my setup (the default)

you probably unchecked the option "Move deleted messages to the Trash mailbox", right?
