Sort tags allow you to display "Billy Joel" or "Sheryl Crow" while the music sorts as "Joel, Billy" and "Crow, Sheryl." You can also do this when composer is important. Your classical music composers may be displayed as just Bach, Beethoven, and Mozart, but you can sort them as "Bach, Johann Sebastian," "Beethoven, Ludwig van," and "Mozart, Wolfgang Amadeus."

Sort Album can be useful when you have a bunch of albums named "Greatest Hits" and you want to sort them as "Monkee's Greatest Hits," "Pretenders' Greatest Hits," "The Who's Greatest Hits," etc.

I haven't found a good use for Sort Name, since iTunes commonly ignores leading articles (a, an, the) when sorting by song name. However, if you want to ignore prepositions (among, between, by, in, near, of, on, up, upon, etc.), then you can use the Sort Name fields to do so.

It's useful if you speak Japanese and want song names to display in English characters but sort according to the Japanese version of alphabetical order.

Or for sorting an artist that uses aliases like: Aphex Twin/AFX/Polygon Window/Richard D. James -- this whole alias thing is popular with the kids these days :)
