I see no reason why you can not use the simple command chflags. This will hide the volume or directory you select from the Finder.

chflags hidden /path to directory/volume

i.e /Volumes/WindowsInfestation

to undo simply chflags nohidden /path to directory/volume

This should solve your issue without altering the name etc

Unfortunately this can't be done if the Windows disk is formatted NTFS (I don't trust the third-party drivers yet).

I came across this before once, shame it doesn't work in Tiger, "invalid flag: hidden"

I just unmount any unwanted volumes including Boot Camp ones, and it's easy to write a script for that.
