10.5: Keep Boot Camp partitions off the desktop
In Finder>Preferences>General I found unchecking "Hard disks" and "CDs, DVDs, and iPods" keeps my Boot Camp drive off the desktop. This is OK with me as I usually don't need to see CDs mounted on the desktop as I can reach them through the Sidebar.

Acutually I think it's easier to set the bootcamp partition to invisible. I've got bootcamp on 10.5 and 10.4 and this works just fine. I think you'll need the dev tools installed to use the SetFile command. You just execute this in the terminal:
sudo SetFile -a V /Volumes/BOOTCAMP_VOL_NAME/and that will make it invisible on the desktop and in the finder. Obviously the "BOOTCAMP_VOL_NAME" should be changed to match the name of your bootcamp partition. You can still get to it in the terminal and you can open a finder window to it with command+G if need be. Just use a lowercase 'v' in the command if you want to reverse the process. I can't remember if sudo is necessary but I put it in just in case.
