Yes, something odd is going on here. I changed the type of a bunch of ripped music videos this morning. iTunes does indeed touch the reclassified files, because both iTunes itself and Time Machine subsequently think they need backing up. So I did an iTunes back-up. I had temporarily to delete a few tracks from the library (while keeping the files) so as not to overflow a single DVD. When I reimported the files (which will get backed up next time), they'd lost their new classification, and were just plain movies again.

A bit more digging suggested that the only reason a back-up of the reclassified files was needed was because they'd been moved out of the library's Movies folder to the relevant album folder. Checking new and old files with AtomicParsley showed none of the tags (atoms) had changed. However, three four-byte sequences in the files have changed: probably timestamps.
