List of OS X dictation commands System 10.8
Mountain Lion's dictation feature may not be as good as a dedicated speech recognition program (read: Nuance's Dragon Dictate), but it's good for those who only want to dictate from time to time. Apple has published a tech note about the dictation feature, listing all the commands that are possible. This shows you which types of punctuation you can use, but also how to make capital letters, go to new lines and new paragraphs, how to get numerals typed and more.

List of OS X dictation commands

I haven't installed Mountain Lion yet, so perhaps someone who has could answer a question that Apple's tech note does not: namely, if you simply say "period" to insert the punctuation, how do you get it to insert the word "period"? (I'd assume that the underlying dictation code is the same as on iOS, and this is a problem I've not been able to solve there so far...)

From some additional experimentation on iOS, it seems that maybe the trick is sentence flow?

If I say: "I wonder if this is from the Devonian period", I get "I wonder if this is from the Devonian." whereas if I say "I wonder if this is from the Devonian period that I studied in college period" I get "I wonder if this is from the Devonian period that I studied in college."

Weird -- this seems awfully non-deterministic and likely to break in many different ways (for example, I can't figure out how to dictate a sentence like "How would you get it to type the question mark symbol?" no matter what I try... it always comes up with something like "How would you get it to type the? Symbol?")
