Preview scan crops in Image Capture Apps
I just happened upon a helpful key combination that can temporarily display a preview of a scan in Image Capture.

If you hold down Control and Option when viewing a scan Overview in Image Capture, the background changes to gray, and any rotation in a crop is applied. This makes it easy to avoid any stray white borders on your scans.

[crarko adds: I haven't tested this one; you don't get the same options on a camera import. I looked and didn't find a previous hint for this.]

Preview scan crops in Image Capture

I used Image Capture with my CanoScan LIDE 200 ever since installing Snow Leopard but recently found Canon has native Snow Leopard compatible software. The Canon scanning plug-in has much better control of scans, 48bit colour, image processing, and can scan directly to Adobe Photoshop and Acrobat Pro. It's nice that Apple supports scanning in Image Capture, however if your scanner manufacturer provides specialized software, I recommend using it.

Be very careful with installing vendor software packages. I've never had good luck with them. They tend to install lots of extra crap that you don't want and can't get rid of.
