Format Mail.app messages with Tables or Lists

When I send messages to my students, I frequently need to have a table with borders, etc. included in the body of the message. Mail doesn't seem to offer the ability to create and format tables, so I use the following multistep process.
- I create my message in TextEdit or Bean, including any tables with the formatting I desire.
- Select the message
- Copy and Paste it into Mail
The resulting email can still be edited. Both the source document and the mail message must be in Rich Text Format for this to work.
[crarko adds: This has been in the queue for a while, and I wasn't quite sure if I could use it. But given today's other hint it seemed worthwhile to compare programs that simply use the Cocoa frameworks (like TextEdit and Mail) with those that make changes (like Chrome). One of the (many) big pluses of Cocoa is the Text System. Mail makes use of that as described in this hint to allow the tables or lists to be edited even though it doesn't display the built-in editing tools that TextEdit does. Windows users make use of Word for their Outlook mail editor to get the same effect, which seems like a much bulkier solution to me.]
