Snow Leopard only hintIf you click-and-hold on the Trash icon in the Dock, the contextual menu appears, showing Open and Empty Trash. Press and hold the Command key, though, and Empty Trash turns into Secure Empty Trash.

Or, if you have already set it to securely empty Trash in the Finder prefs. it does it on it's own now.
This is new to 10.6 from what I can tell.
In other OS X versions you had to bring up the Trash Finder window to invoke the secure empty or do it from the Finder menu bar.

This is odd...wasn't it the option-key in all previous MacOS X versions?
Would have further tried the option key to do so "menu item manipulations".
