In any application that uses the "avatar choice" dialog to associate an image with a name -- Address Book and iChat, to name two -- you can spin the avatar around to choose any orientation. Just hold down the Option key then drag with your mouse/trackpad to rotate the image, complete with a 'clock' guideline as you spin.

Nice...<rant>but why is there this culture among Mac developers (or at least Apple) of having all these hidden features that you can only find by holding down the option key? I had been using a Mac for several years before I realized this was a common practice. Why not document it?</rant>
