Customize data fields in the Column Browser in iTunes 9 Apps
In iTunes 8, Apple took away the check box in Preferences that allowed you to remove the Genre column from the column browser. This helpful hint showed us how to disable it again via Terminal.

To my horror, the genre column has returned in iTunes 9, and the Terminal command did not work. Alas, fear not -- Apple has actually made the column browser better than ever! After enabling the column browser via View » Show Column Browser, you can then choose View » Column Browser to select or deselect any of the following columns to use in the column brower: genre, artist, album, composers, and groupings.

You can also select to have the column broswer positioned on the left, instead of at the top. (Note that not all columns are available when the browser is positioned on the left.)

Customize data fields in the Column Browser in iTunes 9

All columns are available on the left, but you can only have 3 at a time. The best part about this, which you did not mention, is that each playlist can have its own browser! And, even better, it remembers the left and top positions between switching. You can create keyboard shortcuts for "On top" and "On left" to switch between them (or at least this works in Snow Leopard).

Now I just need an AppleScript to automate the task of removing Genre and adding Composer and Groupings in each playlist.
