In response to this earlier QuickTime X hint, in which a Terminal command was given to auto-play QuickTime Player X videos, user NoName commented with a link to Megabyte Computing Solutions' free QuickTime Player X System Preferences pane.
I thought this worth mentioning as a standalone hint, so here it is.
[robg adds: I've tested this panel, and it seems to work as described, excepting one known bug (values in the prefs panel reset each time you load it, though the actual behavior of QuickTime Player isn't changed). I'm still hoping someone will find a way to put the controller and title bar back outside the window, where they belong. Until then, though, I'm using the 'always hide' mode in this System Preferences panel to make them invisible.]
