10.6: Unminimize all docked Finder windows at once Desktop
As pointed out in this truly ancient hint, if you have multiple Finder windows open, Option-clicking the minimize (yellow) button will send all of those open windows to the Dock. No big deal hint there.

However, now with Snow Leopard, Option-clicking on any docked window will now release all docked Finder windows.

[robg adds: In 10.5, Option-clicking on one of many docked Finder windows didn't do anything, whereas it did work for docked windows from Firefox, TextEdit, and other apps.]

This works in Safari on Leoaprd (10.5.x) as well.

No joy in iTunes.

I believe this is a cocoa feature that's been around for a while. Old Finder was Carbon, but new Finder is Cocoa: hence the cool new unminimize-all feature.

Option clicking on the dock icon of a running program hides/minimizes all of the on-screen windows if that program is currently active (menu shown in the menu bar).

This only works if "Minimize windows into application icon" preference in the Dock's System Preference is set to off.

Indeed. A big draw back since this would actually make this option even more useful.
