Manually change the order of iPhone icons iOS devices
When you have a lot of applications installed on your iPhone, the Apple way of moving their icons (dragging from one screen to the other) may be a cumbersome task.

If your device is jailbroken, it is possible to edit the programs' locations by hand. You have to connect to your iPhone's filesystem (by AFP or SFTP), and then copy this file...
/private/var/mobile/Library/Preferences/com.apple.springboard.plist
...to your desktop. (This path is for iPhone OS 2.2.1; it may have changed with OS 3.0.)

Open it with Property List Editor and unfold the iconState » iconLists. Icons are ordered by page (from 0 to 8), then an iconMatrix (line from 0 to 4, and column from 0 to 4). Each app is identified by a displayIdentifier code. Hex codes are for Safari desktop favorites, and integers 0 for empty spaces. Here's a screenshot so you can see exactly what it looks like.

So you 'just' have to copy/paste items to change the order as you wish, and put the file back to the iPhone and restart it. If you get the default alphabetical order, just try again!

I'm no programmer, but I would have thought someone could write an application to do this using, you know, the mouse - to move icons around. It would be just like 1984...

by chance I came across this yesterday:

Check out "Categories" under "Reason #7". It seems to be a powerful solution to the problem of too many icons.

I haven't got an iPhone, but consider buying 3GS, so I haven't tested it and am not affiliated with it. Just thought it might help someone...

You need to transform the plist between binary and XML before and after...
XML files are plain text. I repeat, XML files are plain text files like any other .txt in the world. There is no compiling or transforming, and there is no binary form. You can open a plist file in any text editor by changing the file type, as easy as changing the file suffix to .txt Even Notepad on Windows, and TextEdit on OS X. If have already tried this, and all you see is an unreadable file, then check the preference settings of your text editor, make sure your text encoding is UTF-8, and look for a setting that ignores rich text or html commands when opening a file, or try to "open as text."

Apple has been using it in their plists since 10.4 (I think)

In Terminal.app:

plutil -convert xml1 some_file.plist
