You can Control-click and select Edit Message from the contextual menu on any previously sent message in Skype to edit its content. What I discovered by accident is that you can type s/old/new/ in the text field and submit to have Skype edit your last-sent message accordingly. Regular expressions are not officially supported, but nevertheless it's pretty convenient.
Note that this does not work in Skype on Windows.

I can confirm the regex replacement is not working on Skype (beta) 2.8.0.324 for OSX. I was looking for that functionality though.....

Thanks for the great hint! On my work PC I use CTRL+UP to get the previous line back for editing. But this is even better!
