Make iPhone stay in UTC Regardless of Current Time Zone iOS devices
For international travelers who cross many times zones each day, such as those in aviation and those in the military, it is common to live by Coordinated Universal Time (also known as UTC, Z or Zulu, and GMT or Greenwich Mean Time). An earlier hint noted that the iPhone can display UTC in the World Clock, but you can also set your iPhone to stay on UTC.

To change to UTC you must first select Settings > General > Date & Time. Turn off Set Automatically. You should also turn on 24-Hour Time, which is optional but is most likely used by anyone who needs to live by UTC. When you turn off Set Automatically, you are shown the Time Zone option. Select Time Zone and type in UTC in the search box. Select UTC from results list. The iPhone will now stay on UTC regardless of your location in the world.

[kirkmc adds: No iPhone here, but on the iPod touch you can set the time zone to UTC if you want.]

I assume that this means the time will drift though, i.e., the time will become inaccurate after a while.

I assume the term "automatic" refers to the ability to switch time zones according to data received from mobile carriers. My guess is that carriers transmits UTC and time zone, and with automatic off, iPhone discards the time zone information and simply displays UTC…

Can anyone confirm?

No, Set Automatically means just that, it sets the time and time zone automatically. If you turn it off, you have to set the time manually, and it will most likely drift eventually.

Turning off Automatic prevents the iPhone from displaying the local time (as received from the local carrier) on the phone when you move from time zone to time zone. I have not tested to see how much drift may occur. You can correct for any drift you believe has occurred by just turning automatic back on for a minute periodically.

I know what you mean by getting the time from carriers, I had once a SE which (sometimes) changed the time accordingly. But I believe iPhone gets the time zone from whatever Core Location uses (WiFi via Skyhook, GPS or towers triangulation) as it got the proper time with no SIM.

I believe that Touch has the same function... Can someone confirm?
