The iTunes search engine seems to handle star ratings now, at least using 10.5.2 and iTunes 7.6. I was looking for an album name, and added a "*" to the search. iTunes came back with the name, and all of them with one or more star. The more stars you add to your search, the higher rating it looks for.
[robg adds: I'm not sure when this was added, but based on this older hint, I don't think it's always worked. iTunes runs a "greater than or equal to" search for the number of stars you put in the search field -- so to find all songs with exactly some rating, you'll need to use a Smart Playlist. But for quick searches, this works well. As noted, you can combine stars with other text, so you can find all the music by a given artist with a star rating of at least three by typing Beatles *** in the search box, for example.]
