Temporary vs. permanent PDF display changes in Preview Apps
I've often been disappointed when a PDF document opened in Preview in a different view than I expected, e.g. in Facing Pages. It seems that control-clicking on a document to change view settings does so only temporarily.

If, however, you want to open all of your PDF documents in, say, Single Pages or Continuous, open one now and change its view in menu View » PDF Display. After that, all PDF documents will open using these settings.

That is fantastic! I've been frustrated by this for months. And I discovered you can remove page breaks from this menu, too. That makes reading PDF documents a little more pleasant for me.

You can also try another PDF viewer like Skim. It can only open PDFs though.
