The solution to this problem is to not display the Time and Timer on the Presenter's Display. This will enable smooth transitions, animations, and playback of videos in Keynote during presentations.

Reduce lag when presenting Keynote on external displays

Not too sure if many realise this, but Keynote animations, transitions and video playback may suffer some lag and "jerks" when presenting on external monitors or projectors. This is assuming that the presentation is on the external display, and the primary display is displaying the "presenter's display." Somehow, this seems to affect the portables more than the desktops.

Reduce lag when presenting Keynote on external displays
The reason that sometimes presentations don't display well is because as soon as you plug in an external monitor, the video ram is cut in half. As noted in the hint, you're going to notice this a lot more on laptops compared to desktops due to less video ram. This hint does work by the way! Thanks!

that would probably be because you're having almost double the RAM that i (and most other MacBook/MacBook Pro users have)

I use presentations everyday with my 7th grade science class. I have an OLD PB 12" G4 (300 something RAM) I do see this problem occasionally, mainly the first time the presentation is run.... |
