There's no way to add or delete pages from a PDF within the Preview application. However, if you need to make only a one page PDF document, here's how. Use the Select tool to mark the whole area of a given page, then select Edit -> Copy, then File -> New From Clipboard. The result will be a new one-page PDF that you can then save.

An easier way is to simply print the desired page as a PDF from Preview. Same result.
Smaller clip, too
You can do the same thing to make a smaller than one page clip, too. I do this all the time to make small PDF clips to include in Keynote presentations and LaTeX-generated documents.

Hmmm.... what I do is show the thumbnail drawer, click on a single page, hit apple-c for copy, then hit apple-n for new-- I get a single page pdf. I use this to send out pdf invoices by email, where I've printed all of my invoices (from FMPro) to a single pdf saved to my desktop.

Thank you for this hint. I've been trying to do this for quite a while and just assumed I couldn't do it for free (maybe this was added in 10.3 or 10.4?). Thanks for the hint and thanks for the other comments/methods. Just used it!

With Pdflab you can split, combine, reorganize Pdf's.

All you have to do is open the pdf in preview, apple + c copies the page that you are on, apple + n., apple + v and you have the single page pdf.
