First of all, install Flip4Mac instead of the old Windows Media Player. Open the Flip4mac WMV System Preferences pane, select the Movie tab, and make sure that "Create streaming movies" box is checked. Then open your favorite web player and go to the radio site you're interested in capturing.

Play the radio station in the browser with the Flip4mac WMV Web plug-in (this should happen automatically when you click the station's link in the browser). Now click on the small triangle at the right-hand end of the controller bar below the movie and select Save as QuickTime Movie... from the pop-up menu. Finally, drag the saved QuickTime file from your Desktop to iTunes, and that's it. Now you can listen your radio right in iTunes.

[robg adds: I tested this, and it works, though it took me a few tries to find a streaming Windows station that would play in Safari. Most either crashed the browser, or Flip4Mac told me that it couldn't handle that type of stream.]
