To launch iSync in debug mode, press Option-Shift when launching. This way, a (very detailed) log of all of iSync's operations will be written into ~/Library -> Logs -> iSync.
[robg adds: When you launch iSync this way, you'll see the above image after it launches. However, Option-clicking something in Finder closes the window, which can be annoying. After some experimentation, I found you can launch iSync as usual, then press and hold Shift and Option before iSync finishes loading. This might not work on the new super-fast machines, but it worked fairly easily on my Dual 2.0 G5.]
