A while back, I wrote this hint, which explained how to change the color of the Group divider bar in iChat's Buddy List window. While I was out on leave with the new baby, Dan Frakes covered iChatExtender for Macworld's Mac Gems column. This standalone app is, among other things, a very well done front-end to the process described in the linked hint. Not only that, but there are multiple color options to pick from, and it's super-simple to return to the stock color scheme.
In addition to easily changing the color of the Group bar, you can also customize the color and shape of the speech bubbles (if you use them), and really customize the iTunes status message. I like it just for the ease with which you can dump the ugly gray Group dividers, but Dan covers its other abilities in more detail in his writeup. Since it's a standalone app, there's no need to worry about extension issues, though you will have to quit and restart iChat to see the changes (you can do this directly from the app).
