I recently started using iTunes as my main iPod video converter, because it copies the tags of the existing non-iPod movies from my library when I convert them.
After you've selected one or more videos in the library to convert, and started the conversion process, it appears that you can't append any more items to the conversion list. The "Convert Selection for iPod" item disappears from the contextual menu, and you can't drag items into the list of movies to convert (which is similar to the original behavior of the Videos category, and that changed one or two updates ago).
You can, however, choose "Converting Songs" from the "Add to Playlist" contextual menu to add more videos to the conversion list.
