Since I don't like waiting for the Template Chooser dialogue every time I start a new document in Pages, I have it disabled (in the Preferences). However, it's a pain to have to go the preferences and enable it every time I want to use one of Pages' templates.
The solution to this problem is to hold down Option while creating a new document. This will cause the Template Chooser to be temporarily enabled.
[robg adds: You have to do this through the File: New menu item; I tried using Command-Option-N, but it doesn't work. Pages also gives no visual indication that Option New will do anything unique, so I had no idea this feature existed. It doesn't work in Keynote, but it's not as important there, as the Themes toolbar button lets you quickly change themes.]
