Edit Smart Addresses in new Mail messages

I just stumbled upon the fact that if you double click the Smart Address in a new Mail message, you can then edit it directly. This only works when writing a new message, however. Existing Mail is still broken such that you can't get around the "smart" address to simply copy the person's name.

[robg adds: While you can't double-click an address in an existing email, you can control-click and choose Copy Address to copy the actual email address.]
