While looking to see if there was a way to re-force a Podcast download today, I saw a new option in the iTunes context menu that shows up when you Control-Click on a podcast file.
You can now select "Do Not Auto Delete" (or "Allow Auto Delete" if you've previously disallowed auto-delete) to override global delete settings in iTunes. This certainly wasn't there when iTunes first got podcast support, but I don't know how recently it was added.
