Not sure if this is old news or not, but choose File: Get Info (or Command-I) on an application will now also tell you the architecture that app was compiled for:

This appeared in the early Intel builds (10.4.1) and appeared for 'normal', PowerPC Macs in 10.4.3, which was just released a few weeks ago. You could probably get it to appear before then with a hidden setting with the defaults tool.

Too bad it doesn't work for frameworks and 'nix-style libraries (.dylibs) and executables. I've just started converting a bunch of my 'nix builds to universal and this would be a nice easy way to verify the universal build (instead of icky commandline stuff).
