Problem: I loaded all of my files on my brand spankin' new iPod, but when I use the iPod, I can't see any of the artwork. When I plug the iPod into my Mac, I see the artwork in iTunes.

Solution: Plug the iPod into your Mac. In the settings for your iPod (via iTunes: Preferences or control-clicking on the iPod), make sure that the "display album artwork" option is enabled. Exit out of iTunes. Using Terminal, do this:

 cd /Volumes/iPod_Name/iPod_Control/Artwork/
Replace iPod_Name with the name of your iPod, of course. Now just delete (rm) or rename (mv) the ArtworkDB file. Restart iTunes. iTunes will rebuild the ArtworkDB file, and all of your artwork should show up again. Note that this tip assumes you are managing your songs manually. It's a much better solution than deleting all the files and reloading them, as suggested by Apple.
