Tiger only hintI have many people in my Address Book, and I wanted to sort them out by where they lived. So I created a Smart Group (press Command-Option-N) and named the group the area that I was trying to sort. So for instance, I wanted to get all the people in Missouri in one group, so I named it "Missouri." In the "Contains cards which match the following" section, I selected Phone, Contains, 816 (which is the area code for the Kansas City, Missouri area).

[robg adds: Smart Groups in Address Book are really a nice addition, and you can do some interesting things with them, as shown here. I still wish there was just a simple "Sort on whatever field I tell you to sort on" option, insted of only First Name or Last Name.
