Actually, you can: copy QuickTime Player to somewhere else (Desktop, Documents, Home, etc.), Control-click on it and choose Show Package Content, go to Contents -> Resources -> English.lproj, and double click MainMenu.nib. Interface Builder will open and there you can delete the grayed out menu items.
For this, you will need to have InterfaceBuilder installed, that's possible through the Developer tools installer. You can also take Dutch.lproj or French.lproj or ... according to your language. Note though, that if you decide to buy QuickTime 7 Pro, you'll need to have the original, because these menu items will be gone for good (that's why you should have copied the app first).
