In Pages, the listed templates are based on the system language that is enabled in the System Preferences. I am Dutch, but prefere English as a system language, so I am apparently out of luck. However, it is possible to change all the different templates to your preferred language for writing with the following simple task:

  1. Go to Pages.app, control-click on it, and choose Show Package Contents.
  2. Inside the Contents folder, go to: Resources -> your preferred writing language -> Templates.
  3. Highlight the "ISO" folder, and hit Command-C to copy it.
  4. Go to Resources -> English.lproj -> Templates.
  5. Rename the English "ISO" file (for backup purposes).
  6. Paste the copied "ISO" folder.
