This hint is a follow-on to a previous hint regarding emailing from iCal ... I use AppleScript to send out reminders using iCal. I found I have the most control over what the body of the text looks like if I create it in something like TextEdit, and then save it as a plain text file. Copy and paste this AppleScript into Script Editor.

Change the areas between the quotation marks to match your information. For example, your account should be the actual name of the account you're sending from in mail ("My Mail", "Work", etc.). After you have everything set the way you want, save the file out of Script Editor as an application.

Now make an event in iCal and add an alarm. Choose "open file" from the list, and select your AppleScript application. Set the alarm time to when you want the mail sent, and you're done.
