Use an equation service to typeset math in OmniGraffle Apps
The OS X system service called Equation Service provides a service called Typeset Equation that is available in OmniGraffle (and other Cocoa apps, of course) through the keyboard shortcut Command-/.

One should be able to add math to an OmniGraffle figure by simply typing the LaTeX code using the Text tool, selecting it, and then typing the shortcut. But the resulting math is clipped by the boundaries of the text box. One needs to manually change the wrapping rule "If Text Doesn't Fit" in the Text Position Inspector from "Resize to Fit" to "Overflow." But there seems to be no way of making this the default, or a seperate style. Clicking on the overflow button to change the default style does not work, as OmniGraffle stubbornly defaults the text tool wrap style to "Resize to Fit."

One workaround is to choose a rectangle with no "Stroke" or "Shadow" and type text inside it. This is because OmniGraffle allows the wrapping for rectangles to be set to "Overflow." Now we can have math typeset within OmniGraffle without leaving it.

Nice!

There have been a couple of hints in the past about a slightly different approach to this situation. In particular, there is a program called "LaTeX Equation Editor" that generates draggable PDF images of LaTeX code snippets. I've been very happy with it.

It sounds like the Equation Services method has the advantage of working within the OmniGraffle (or whatever) window, so no need to switch back and forth between two apps. That sounds pretty good! Hmmm, I'll have to try it out.
