If you want to rip a CD in AAC format, but have already ripped it in MP3 format, insert the CD in your Mac and click Import in iTunes 4. It will tell you that some songs are already in the library, and will give an option to replace them. Go ahead and replace them. iTunes will automatically delete the old songs and replace them with the new versions. Not only that, but it will automatically copy the old songs' ratings and play counts ... neat.

Note that this won't work for tracks that you have modified the tags of after having done the original import. Actually it depends on which tags you edited. There is some number of key tags that must match for the track to be considered the same. If you only modified some tracks from a CD then you'll still get the message asking if you want to replace the tracks in your library, but the ones you had modified won't be replaced, instead you'll end up with two copies of those songs.

It also doesn't work for tracks that have been joined together. Actually, I think it works only for the first track joined with other tracks. For the rest, though, it doesn't work.

If you're willing to deal with the double-lossy-compression issue (hint: it's a terrible idea.. but hey, it saves time), just change the import to whatever you want in the preferences, select the tracks you want to convert, and go to Advanced -> Convert Selection. Don't even need the original CD. But of course using varying psychoacoustical models for lossy compression can be.. problematic.

I've recently also created a script that checks through a Library directory, and adds any files it finds to iTunes. Sort of like a reverse of Super Remove Dead Tracks. (link) You can read about it here
