If you use the Exposé Show Desktop button (F11), then click on the desktop to activate the Finder, with no Finder windows open, then hit Exposé Application Windows (F10), you can launch an app and keep all the other windows off to the sides.
I have my middle mouse button set to Exposé/Application Windows and discovered this trick completely by accident!
[robg adds: This only works for applications that you can launch without opening a Finder window (i.e. they're in the dock, or you've set up shortcut keys). If you open a Finder window before launching an application, all the hidden windows will come flying back into view when you launch the app.]
