Add the Software Update application to the dock Desktop
You can have Software Update appear in your dock -- not the System Preferences panel, but the software update item itself.

Here's how I did it ... while Software Update was downloading and installing an update, I right clicked on the Software Update item that was running in the dock, and selected the "Keep In Dock" menu item. When the update finished and the system restarted, I had Software Update in my dock.

[robg adds: Here's another way to get the Software Update application into your dock. The program lives in /System -> Library -> CoreServices, and is called (surprise!) Software Update. Open this folder in the Finder, and then just drag Software Update to your dock. Personally, I just use the Software Update option available under the Apple menu in 10.3, but that's because I prefer a minimalist dock.]

Or, even more minimalistic and pure (depends on who you are asking -- I, for one):

$ sudo softwareupdate --list
$ sudo softwareupdate --install [packages returned from --list]
i.e. $ sudo softwareupdate --install apple_update-1.0

Or, if you just wish to download the package and not install:
$ sudo softwareupdate --download apple_update-1.0

I have had this in my dock for a while - all I did was drag it there.

Actually I've noticed that the version of Software Update under the apple menu is older than the one in System Preferences.

I upgraded to Panther from 10.2.8.

Any idea how I update the Apple Menu?

Also, while SU is running, you can make it (or any other running app) stay in the dock by simply moving the icon somewhere else in the dock (click-and-hold and then drag). It will then be there after a quit.

So here's a case of a guy who didn't realize that Software Update is an application that can be launched from System Preferences, among other ways. You can add this application to the Dock in any of the ways that you would normally add an application icon to the Dock. Nothing new here... move along.
