Here's one I stumbled on by accident: I was getting ready to send an email to someone, but at the last second I decided to send it to someone else, so I changed both the recipient and the message accordingly. Then I changed my mind again, but instead of laboriously retyping the entire original message I just hit command-Z in the message body until it was restored, as expected. Then I clicked in the recipient field and hit command-Z on impulse, and the original recipient was restored. Just for fun, I placed the cursor in the Subject field, and found that it too had its own unique Undo queue. Bonus: Each field is multiple-undo-abled.
I haven't tested to see if the same holds true for other apps with multiple fields, but as Undo is usually global rather than local, I thought this was a tip worth mentioning.
