The Console application (in /Applications -> Utilities) has been greatly improved in Panther. There is now a toolbar with Clear, Reload, and best of all, a Filter field, so you can focus on specific issues. Click on the Logs toolbar item, and a sidebar opens, containing a hierarchal view of common log directories and their contents.
Here's a little trick to make Console even more useful. I just made some symbolic links (ln -s) from the log directories of other software I use (like TomCat and Cocoon) to my ~/Library/Logs directory, and they appear in Console.app's sidebar, ready for browsing. You must use symbolic links, as Finder aliases do not work.
